Description

Our seasonal showpiece: layers of Alphonso mango mousse, Madagascan vanilla crémeux, hazelnut feuilletine and a whisper of white chocolate joconde. Set with agar-agar (100% pure vegetarian — no gelatin, no eggs) and finished with a gilded mirror glaze that catches the light. Best served chilled, sliced with a warm knife. Available only when Alphonsos are in season.
